Ingredients:
- 9 lasagna noodles
- 2 cups ricotta cheese
- 1 egg
- 1/2 cup grated Parmesan cheese
- 3 cups chopped vegetables such as spinach, mushrooms, zucchini, bell peppers
- 2 cups marinara sauce
- 2 cups shredded mozzarella cheese
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions:
Preheat the oven to 375F 190C
Cook the lasagna noodles according to the package instructions
Drain and set aside
In a bowl, mix the ricotta cheese, egg, Parmesan cheese, salt, and pepper until well combined
In a skillet, heat olive oil over medium heat
Add chopped vegetables and cook until softened, about 5-7 minutes
Season with salt and pepper
Spread a thin layer of marinara sauce on the bottom of a baking dish
Place 3 cooked lasagna noodles on top of the sauce
Spread half of the ricotta mixture over the noodles, followed by half of the cooked vegetables and half of the shredded mozzarella cheese
Repeat the layers with the remaining ingredients, ending with a layer of mozzarella cheese on top
Cover the baking dish with foil and bake for 25 minutes
Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden brown
Let the lasagna cool for a few minutes before serving
Slice and enjoy!
