Ingredients:
- 4 cups pineapple chunks
- 1/4 cup fresh cilantro leaves
- 1/4 cup fresh ginger, peeled and chopped
- 1/2 cup sugar
- 1/2 cup water
Instructions:
In a blender, combine pineapple chunks, cilantro leaves, ginger, sugar, and water
Blend until smooth
Pour the mixture into a shallow dish
Place the dish in the freezer
Every 30 minutes, scrape the mixture with a fork to break up ice crystals
Continue scraping every 30 minutes until the granita is firm and icy, about 2-3 hours
