Summer Berry Pudding



A quick and easy way to make a tasty and cool summer berry pudding in a pressure cooker. Berries that are both sweet and sour wrapped in soft bread make a tasty and easy-to-make dessert.

Ingredients:

  • 4 cups mixed berries strawberries, blueberries, raspberries
  • 1/2 cup sugar
  • 1 tablespoon lemon juice
  • 8 slices white bread, crusts removed

Instructions:

Put the mixed berries, sugar, and lemon juice in a bowl and mix them together

Let the berries sit for 10 minutes after giving them a light toss to coat them in the sugar

Cut the crusts off of the white bread slices and place them on the bottom and sides of the pressure cooker, making a bread shell by slightly overlapping the slices

Spread the mashed berries out evenly in the pressure cooker that has been lined with bread

Add more bread slices on top of the berries and gently press them down to pack the pudding together

Set the pressure cooker to high pressure and put the lid on top of it

Bring it to a boil

Let go of the pressure and open the lid slowly

Wait a few minutes for the pudding to cool down before carefully taking it out of the pressure cooker

Put a scoop of vanilla ice cream or whipped cream on top of each slice of Summer Berry Pudding
