Ingredients:
- 1 head cauliflower, grated
- 2 tablespoons coconut oil
- 2 cloves garlic, minced
- 1 onion, diced
- 2 carrots, diced
- 1 bell pepper, diced
- 2 cups broccoli florets
- 1 cup sliced mushrooms
- 1 lb chicken breast, diced
- 3 tablespoons coconut aminos
- 1 teaspoon grated ginger
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions:
In a large skillet, heat coconut oil over medium heat
Add garlic and onion, saut until fragrant
Add carrots, bell pepper, broccoli, and mushrooms, cook until vegetables are tender
Push vegetables to the side, add chicken to the skillet, cook until no longer pink
Stir in grated cauliflower, coconut aminos, and grated ginger, cook for 5-7 minutes until cauliflower is tender
Season with salt and pepper to taste
Garnish with chopped green onions before serving
